Toddler Tuna Melts

These tuna boats aren’t the most attractive, but I wanted to share the idea anyways. Boats are english muffins cut in half, covered with tuna salad (toddler version is just tuna, mayo, and a tiny bit of mustard, dill and black pepper). Cover with a thin slice of mozza (I’m too busy to grate cheese) and melt in the oven. Sails are apple slices (I ate the rest of the apple – yum, healthy mom!). Goldfish make the plate fun.

This lunch was a hit with both my 18 month old and my 3 1/2 year old, just showing that you don’t have to be super fancy to make lunch fun. If you try this recipe, please send me a photo and I will feature it here on Mama Brain (or replace my sad version above).
